El Instrumento denominado TESTO 270 determina la concentraci\u00f3n de compuestos polares que se generan durante el proceso de fritura y que son indicadores del grado de reutilizaci\u00f3n que se le ha dado al aceite. Con esta incorporaci\u00f3n, que permite realizar el an\u00e1lisis r\u00e1pidamente en el momento, se podr\u00e1 tomar decisiones en cuanto a desechar o no un aceite, a los efectos de asegurar la inocuidad y calidad de los alimentos fritos. El aparato no solamente se utilizar\u00e1 con fines fiscalizadores, sino que tambi\u00e9n ser\u00e1 usado para el seguimiento de procesos de desarrollo de alimentos para productores locales.
